Onions Sauteed with Peppers
3-4 yellow onions peeled and diced
2 cloves garlic, crushed
3 tablespoons olive oil
2 green peppers, sliced
2 red bell peppers, sliced
2 tablespoons tomato paste
Salt and pepper to taste
3 tablespoons red wine
1 teaspoon oregano
Dash of tabasco
Fresh grated parmesan or romano
Saute the onions and the garlic in the oil until just tender. Add
the peppers and saute for a few minutes more. Stir in all remaining
ingredients except for the cheese. Place in a small, deep baking dish
or casserole, and top with the cheese. Bake at 375 for 45 minutes.
