Cooked Salsa

4 c diced seeded peeled tomatoes
1 med. chopped green pepper
1 large chopped onion
1 finely chopped seeded jalapeno pepper
1/2 c. tomato paste
1/4 c. vinegar
1 tbs. sugar
1 tsp salt
2 tsp garlic powder
4.5 tbs cayenne pepper (?)
4 tbs chopped fresh cilantro

Combine all ingredients except cilantro, bring to a boil and
simmer uncovered 45 min. stirring often.  Cool.

Add cilantro just before serving.

To preserve for later use, pour into freezer containers, and freeze.
Stir before serving.  They have also processed this in boiling water
bath in Mason jars.
